IT’S CALLED GLAZE folks and is made out of white chocolate, milk, sugar, colorpaste, isinglass and mirror gelatin – no chemicals! You freeze the cake witch is typically a mousse cake then prepare the glaze when it’s the right temperature you poor it over the cake. It takes a lot of technique to make it.
