Related Tags: Facebook, tasty Categories: Kiwilimon One comment kiwilimon said on March 22, 2018 Reply SCRAMBLED EGG ENFRIJOLADAS Ingredients: ½ cup of vegetable oil ¼ of chopped onion 2 serrano peppers ½ cup of chopped tomato 5 eggs A pinch of salt 1 cup of precooked pinto beans 3 chipotles ½ cup of Mexican crema 9 Corn tortillas For garnishing: ¼ cup of chorizo (or spicy sausage) ¼ of Mexican crema ¼ cup of queso fresco 2 tablespoons of chopped cilantro Avocado, to taste Preparation: 1. Add a tablespoon of oil to a frying pan over medium heat. Add the onion, tomato and serrano peppers and stir-fry for a couple of minutes. 2. Add the eggs, cook for 10 min or until tender. Season with salt as needed. 3. Blend the precooked beans with the chipotles and the Mexican crema. Add salt to taste. 4. Cook bean mixture for 10 minutes in a sauce pan. 5. Fry corn tortillas with vegetable oil until soft. 6. Fill the tortillas with the scrambled eggs and pour the bean sauce on top. 7. Garnish with cooked chorizo (or spicy sausage), and add the Mexican crema, queso fresco, avocado and cilantro to taste.
